The tamale vendors are arraged in a kind of circular arrangement across the plaza to represent different parts of the world tamales come from so you can easily jump from one delicious tamale to another.

The tamale is a traditional Mesoamerican dish made of masa (a starchy dough, usually corn-based), which is steamed or boiled in a leaf wrapper. The wrapping is discarded before eating.
